In a country famous for its small cup of black coffee drunk off a zinc bar, the number of cafés is decreasing slowly but surely. The economic crisis affected the business and the profession is suffering from changes in people's drinking habits, heavy regulation, and recruitment difficulty. However, the successful opening of theme cafés, cybercafés or "countryside bistros" must be noted. Those that survive offer meals and focus on quality and conviviality; the opening hours must be extensive and the decor creative and attractive for those who work out a concept by creating a universe and the consequent services or entertainment. The sector nevertheless remains difficult: - heavy investment, - creation (licensing) increasingly expensive, - paperwork (anti-noise law, safety standards, payment of amateur musicians, etc.), - work organization is often a problem… However, some things will always make the difference: quality, location, price, hospitality, business sense, etc. This is one of the most regulated businesses: an operating permit is required since April 2009. Therefore, the provisions on the licences must be well understood before starting, otherwise any attempt to create can become lengthy and expensive.
